Kimchi making workshop with Executive Chef Jimmy Ryu
There’s something a little magical about a jar of kimchi –Â the way it changes, ferments, comes alive over time. That’s the spirit behind The Living Jar, a hands-on workshop hosted by our Executive Chef Jimmy Ryu, where you’ll learn the real art of making kimchi from scratch, then take it home to watch it grow.
Held at Yallamundi Rooms, this is a Korean food experience built for sharing: come with family, come with friends, come solo and leave with new ones. You’ll roll up your sleeves for the kimchi-making, then sit down to a spread of Korean pork belly, rice balls, and warming kimchi soup. Drinks available at the bar.

Jimmy Ryu
Executive Chef – Sydney Opera House
Jimmy Ryu is an accomplished Executive Chef with over 20 years of experience across Australia’s hospitality industry, currently leading the Back of House team for the event and catering space at the Sydney Opera House (Trippas White Group), where he collaborates with chef Danielle Alvarez on menu development and event execution.
Jimmy’s career began in Korea in 2001 before he moved through the ranks in Australian kitchens, holding Head Chef and Executive Chef roles at some of the country’s recognised venues — including QT Hotel Sydney’s Gowings (developed with Sean Connolly, earning a Chef Hat in the SMH Good Food Guide), The Morrison Bar & Oyster Room, Jamie’s Italian by Jamie Oliver (part of the original Sydney opening team, later training staff nationally), and stints at acclaimed venues including Noma Australia interns and Bennelong. He has also held Executive Chef roles at the Pullman Quay Grand Sydney Harbour and Catering Project led catering and new-venue rollouts across Sydney and Melbourne.
Alongside his kitchen leadership, Jimmy teaches as a Casual Intern instructor at Le Cordon Bleu, contributing to curriculum development and mentoring the next generation of chefs.
